Rosie is the founder of Mosaic Travel.
Rosie’s love of travel began when she took a GAP year between school and university, working and travelling for a year in the UK and Europe. After uni, she returned to Europe, studied in France and finally put her feet down in Turkey to live and work as a Tour Leader for two years. Returning home to Geelong, Victoria, she couldn’t wait to show others her Turkey, thus, “The Portakal Tour” was born.
Her experience leading tours in Turkey, Croatia and Spain have left her with a wealth of knowledge of not only the destinations, but people and culture. With this knowledge and plenty of insider tips, Rosie carefully creates each Mosaic itinerary to ensure you have the same incredible experience she has had.
After travelling extensively from Croatia, Uganda, New York and New Caledonia, her favourite place to visit is Turkey’s magical Mediterranean coastline. It is home to her favourite food “Midye Dolma”- steamed mussels stuffed with spicy rice and purchased from a street vendor in a side street of Istanbul.
Rosie is a licensed Travel Agent and currently coordinates all itineraries.
Ground Operator for Turkey
Adem manages the travel services for Mosaic Travel’s Turkey Tours. Adem and his NZ-born wife married on a beautiful local beach near Ephesus in 2005, and have a 7-year old bi-lingual daughter.
Adem’s twenty-year background in tourism and hospitality, his own international travel experiences, together with his Travel Agent certification have given him the knowledge, contacts, and experience to enable him to co-ordinate tours and other travel services for his customers.
Tour Guide for Turkey
Caglar grew up in a typically traditional Turkish family in a Black Sea coastal town. As a child he loved soccer, but when he broke his leg, he was made to spend lunchtimes looking up English words in the dictionary instead of playing. His plan B (since professional soccer player wasn’t going to happen) was a career in linguistics.
While at university studying linguistics and professional Tour Guiding, Caglar quickly realized that he’d have to learn his housewife mum’s recipes in order to survive! Cooking and eating are definitely two of Caglar’s favourite hobbies, and his favourite Turkish food is Hamsi, fresh anchovies, local to his home town.
Since 2005, he has loved working as a licensed Tour Guide all over Turkey. He has travelled extensively in the small groups to Europe, Asia and North America and appreciates the colourful differences and similarities of foreign cultures.
While Caglar loves teaching his guests about Turkey’s rich history, he also has the latest knowledge of the hottest bars and restaurants in Istanbul, and loves to share this knowledge.
Caglar is the expert Tour Guide for Istanbul on the The Portakal Tour. He also operates and guides tailor-made private tours on request for Mosaic Travel.
Ground Operators for Croatia
Dita began her career in travel as a student, working as a licensed tour guide. After then working as a Project Manager at a large travel agency, Dita decided to go her own way and start a small, boutique travel agency in Dubrovnik in 2007.
Her inspiration has always been the beautiful Croatian coast, nature, tradition, and history, and she loves arranging holidays tours for people to her hometown of Dubrovnik. When not running around the office, she is reading books and spending time in nature with her husband.
A Culture and Tourism Graduate, Anja joined her mother at the travel agency and with enthusiasm, creates extraordinary experiences for her clients. She has always had her heart set on travelling and organisation. In her spare time, she enjoys the beach, Dalmatian cuisine as well as skiing in the winter time.
Both are enthusiastic travellers and nature lovers.
Research and development
Holly joined the Mosaic team in early 2018.
After catching the travel bug from older sister Rosie, she has enjoyed travelling extensively throughout South East Asia before settling in Bangkok: her home for the past year.
Her aim is to ensure your holidays are extra special and with a hospitality background, adds a fantastic “foodie” touch! She has also implemented our new travel APP which is included with all Mosaic itineraries.

Mosaic Travel is currently on hiatus for 2023 while Rosie is on maternity leave, and will be back in 2024. Signature Tours are NOT currently operating.
